Orange Marmalade Chicken

When my lab test results revealed I was heading for diabetes, my doc told me to cut down on my sugar intake. Unfortunately, my taste for sweet didn’t adjust to my lab results.

I recreated some of my favorite dishes with lower sugar and carbs. The following recipe feeds some of my cravings without the sugar and as guilt free as possible. 🙂

20 minute prep time. In a fry pan stir in and bring to a boil—

1/2 cup chicken broth

1/2 cup shredded carrots

1 cup celery

1/2 cup sugar snap peas, strings removed

1/2 teaspoon garlic powder

On low, boil gently for 10 minutes. Add precooked shredded or cubed chicken. Boil on low, for 5 more minutes, add 1/8 to 1/4 cup additional broth.

Reduce to simmer, and add 2-3 tablespoons Low Sugar Orange Marmalade. Serve when heated, over brown rice, pasta, beans, or eat alone for the lowest carbohydrates possible.
